What is a healthy diet for weight loss?

I only eat organic and try to be as physical as I possibly can but I cannot seem to lose weight. I need to lose about 40 pounds, but I want to do it a safe healthy way. Can any suggest a healthy diet for weight loss? I need to lose this weight in under a 2. You should enjoy eating, it's entertainment. You'll have much more success with a diet if you actually like the foods you eat. Toss out all the diet meals, lowfat and lite crap and replace it with the good stuff.
